  • 8 oz white chocolate chopped
  • 1/4 cup eggnog
  • 2 tbsp unsalted butter
  • 1/4 tsp freshly grated nutmeg
  • 1/2 tsp vanilla bean paste
  • 8 oz dark chocolate chopped (for coating)
  • 1 tbsp coconut oil optional, for smoother coating
  • Pinch of salt

Instructions
 

  • In a heatproof bowl, combine white chocolate, butter, and eggnog. Melt over a double boiler, stirring until smooth.
  • Remove from heat and stir in nutmeg, vanilla bean paste, and a pinch of salt. Mix until well combined.
  • Refrigerate the mixture for 1-2 hours or until firm enough to shape.
  • Scoop and roll the mixture into 1-inch balls. Place on a parchment-lined tray and freeze for 15-20 minutes.
  • Melt dark chocolate (with coconut oil, if using) in a heatproof bowl. Dip each truffle into melted chocolate and place back on the tray.
  • Let the truffles set at room temperature or refrigerate until firm.
