Easter Bunny Chow
A bakery-style Easter Bunny Chow snack mix with chocolate, peanut butter, and festive candies.

- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter
- 1 cup milk chocolate chips
- 1 teaspoon vanilla bean paste
- 9 cups Chex cereal
- 2 cups powdered sugar
- 1 cup Easter M&Ms
- 1/4 cup pastel spring sprinkles
Instructions
- Place the peanut butter, butter, and milk chocolate chips in a medium microwave safe bowl.
- Microwave on high for 1 minute, then stir until the mixture is smooth and silky with no visible chocolate pieces.
- If a few chips remain, microwave in 10 second increments, stirring after each, until fully melted and smooth.
- Stir in the vanilla bean paste until evenly combined, then set the bowl aside.
- Add the Chex cereal to a very large mixing bowl.
- Pour the warm chocolate peanut butter mixture over the cereal.
- Gently fold the cereal with a rubber spatula until all pieces are lightly and evenly coated, being careful not to crush the cereal.
- Transfer the coated cereal to a large bowl with a tight fitting lid or a large zip top bag.
- Add the powdered sugar over the cereal, seal the bowl or bag, and shake vigorously until all pieces are evenly coated and no wet spots remain.
- Open the container and let the coated cereal cool for a few minutes until the chocolate sets slightly.
- Gently stir or shake in the Easter M&Ms and pastel sprinkles until they are evenly distributed.
- Serve immediately or store in an airtight container at room temperature until ready to enjoy.
Notes
- Use rice, corn, or wheat Chex, or a combination, as long as the total equals 9 cups.
- Let the coated cereal cool before adding M&Ms and sprinkles to keep their colors bright and prevent melting.
- For easier coating, work in two batches if your bowl or bag is not large enough to shake everything at once.
