These Double-Decker Ice Cream Sandwiches combine two layers of homemade cookies with rich, real ice cream for the ultimate frozen dessert.

Ingredients
  

  • `12 cookies mix & match: chocolate chip, brownie, oatmeal
  • 2 cups ice cream vanilla, raspberry swirl, etc.
  • Optional toppings: mini chips sprinkles, crushed nuts, melted chocolate

Instructions
 

  • Lay cookies on parchment-lined tray.
  • Scoop 1/4 cup ice cream onto 6 cookies.
  • Top with second cookie; freeze 10 min.
  • Add another ice cream layer on top.
  • Finish with final cookie; press gently.
  • Roll sides in toppings if desired.
  • Freeze at least 2–4 hours.
  • Wrap individually for storage.

Notes

Let sit at room temp 2–3 mins before serving for best texture. Use real ice cream for creaminess. Kids love making their own combos!
