  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups white chocolate chips or wafers
  • 1 tablespoon ground cinnamon
  • 1/2 cup granulated sugar for coating

Instructions
 

  • Line a rimmed baking sheet with parchment paper or a silicone baking mat and set aside.
  • In a heavy bottomed saucepan, melt the butter over medium heat.
  • Add the granulated sugar, light brown sugar, and salt to the melted butter and stir constantly with a heatproof spatula.
  • Attach a candy thermometer to the side of the pan and cook the mixture, stirring constantly, until it reaches 290°F.
  • Remove the saucepan from the heat and immediately stir in the vanilla bean paste until fully combined.
  • Pour the hot toffee onto the prepared baking sheet and quickly spread it into an even layer about 1/4 inch thick.
  • Let the toffee cool completely at room temperature until firm.
  • Once the toffee has cooled, place the white chocolate chips or wafers in a microwave safe bowl.
  • Microwave the white chocolate in 20 second intervals, stirring after each interval, until melted and smooth.
  • In a shallow dish, whisk together the 1/2 cup granulated sugar for coating and the ground cinnamon until evenly combined.
  • Break the cooled toffee into bite sized pieces with your hands.
  • Dip each piece of toffee into the melted white chocolate, coating one side or fully coating as desired, and let any excess drip off.
  • Immediately roll or press the chocolate coated side of each piece into the cinnamon sugar mixture to coat.
  • Place the coated toffee pieces on a sheet of parchment paper and let them sit at room temperature until the chocolate is fully set and dry.
  • Store the finished churro toffee in an airtight container at room temperature until ready to serve.

Notes

- Use a heavy bottomed saucepan and medium heat to prevent scorching the toffee mixture.
- Have all ingredients measured and pans prepared before you start cooking, as the toffee sets quickly.
- If your kitchen is warm, chill the finished toffee pieces briefly to help the white chocolate firm up.
- Break the toffee into irregular pieces for a fun, candy shop style presentation.
