- 1 package puff pastry thawed
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 6 large egg yolks
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon zest
1. Roll out puff pastry on a lightly floured surface to 1/8-inch thick. Cut circles slightly larger than muffin tin wells. Press into tin to form tart shells.
2. Heat heavy cream and milk in a saucepan over medium until simmering.
3. Whisk egg yolks, sugar, and flour in a bowl until smooth.
4. Gradually whisk hot milk into egg mixture. Return to saucepan; cook over medium, stirring constantly until thickened.
5. Remove from heat; stir in vanilla, cinnamon, and lemon zest.
6. Preheat oven to 400°F. Fill tart shells with custard, 3/4 full.
7. Bake 15-20 minutes until golden brown with a slight wobble.
8. Cool in tin for 10 minutes, then transfer to a rack to cool completely.
