Ingredients
  

  • 1 package puff pastry thawed
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 6 large egg yolks
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon zest

Instructions
 

  • 1. Roll out puff pastry on a lightly floured surface to 1/8-inch thick. Cut circles slightly larger than muffin tin wells. Press into tin to form tart shells.
  • 2. Heat heavy cream and milk in a saucepan over medium until simmering.
  • 3. Whisk egg yolks, sugar, and flour in a bowl until smooth.
  • 4. Gradually whisk hot milk into egg mixture. Return to saucepan; cook over medium, stirring constantly until thickened.
  • 5. Remove from heat; stir in vanilla, cinnamon, and lemon zest.
  • 6. Preheat oven to 400°F. Fill tart shells with custard, 3/4 full.
  • 7. Bake 15-20 minutes until golden brown with a slight wobble.
  • 8. Cool in tin for 10 minutes, then transfer to a rack to cool completely.

Notes

Enjoy tarts the same day for best flavor.
Store in the fridge for up to 3 days but reheat for best texture.
