Ingredients

  • 1/4 cup unsalted butter
  • 3 cups mini marshmallows
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 3 packets apple cider drink mix
  • 3 cups white chocolate chips
  • 1/2 cup caramel bits or caramel squares
  • 1 1/2 Tbsp heavy cream

Instructions

  • 1. Line an 8x8 inch baking pan with 2 layers of tin foil, leaving an overhang.
  • 2. In a large pot, combine butter, marshmallows, sugar, heavy cream, and apple cider packets. Cook over medium heat, stirring occasionally, until marshmallows are melted, about 8-10 minutes.
  • 3. Meanwhile, place caramel bits and heavy cream in a microwave-safe bowl. Microwave at 45-second intervals at 50% power until melted and smooth. Set aside.
  • 4. Remove pot from heat and stir in white chocolate chips until melted.
  • 5. Pour fudge into the prepared pan. Drizzle melted caramel on top and use a small metal spatula to create swirls.
  • 6. Refrigerate for 3 hours. Cut into squares.

Notes

Use an overhang of foil to lift fudge easily from the pan.
Store in the fridge for best texture.
