Date Candy Bars – Naturally Sweet, Totally Addictive Treats

Naturally sweetened with Medjool dates, these chewy, chocolate-dipped date candy bars are easy to make, no-bake friendly, and completely addictive!

Ingredients
  

  • 1 ½ cups Medjool dates pitted ¾ cup raw almonds or walnuts 2 tbsp nut butter (almond or peanut) ½ tsp vanilla extract ⅛ tsp sea salt ¼ cup dark chocolate chips (optional for coating) 1 tbsp shredded coconut or chopped nuts for topping (optional)

Instructions
 

  • 1. Line an 8x8 pan with parchment paper. 2. Soak dates in warm water for 10 minutes if dry. Drain well. 3. In a food processor, blend dates and nuts until crumbly. 4. Add nut butter, vanilla, and salt. Pulse until the mixture sticks together. 5. Press evenly into the pan. Chill for 30–60 minutes. 6. If dipping in chocolate, melt chips and dip chilled bars halfway. Sprinkle with toppings. 7. Refrigerate until chocolate sets. Store in fridge or freezer.

Notes

For a softer texture, use cashews instead of almonds. Bars last up to 10 days in an airtight container in the fridge. Freeze for longer storage up to 3 months.
