  • 1 cup puffed quinoa
  • 100 g dark chocolate 70–85%, chopped
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla bean paste optional
  • Pinch of sea salt
  • 2 tablespoons chopped roasted hazelnuts or almonds optional
  • 100 g dark chocolate 70–85%, chopped (for coating)
  • 1 teaspoon coconut oil for coating
  • Flaky sea salt for sprinkling (optional)

Instructions
 

  • In a heatproof bowl, melt 100 g of chopped dark chocolate with 1 tablespoon of coconut oil using a double boiler or microwave in 30-second increments, stirring until smooth.
  • Stir in the vanilla bean paste and a pinch of sea salt.
  • Add puffed quinoa and chopped nuts, stirring until coated.
  • Use a spoon to portion teaspoons of the mixture. Roll into balls with your hands.
  • Place balls on a parchment-lined tray and refrigerate for 30 minutes.
  • Melt the remaining 100 g of dark chocolate with 1 teaspoon of coconut oil until smooth.
  • Dip chilled balls into melted chocolate, allowing excess to drip off. Sprinkle with flaky sea salt if desired.
  • Chill for another 15–20 minutes until the coating is set.

Notes

- Ensure the chocolate is fully melted and smooth for best coating.
- Store in an airtight container in the fridge for up to 1 week.
