  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons heavy cream
  • 2 teaspoons vanilla bean paste
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar for topping

Instructions
 

  • Preheat oven to 350°F and line a baking sheet.
  • Cream butter with sugars until fluffy. Mix in heavy cream and vanilla.
  • Gradually fold in flour, baking powder, and salt. Chill dough 30 minutes.
  • Scoop dough, flatten slightly, and bake 10–12 minutes. Cool cookies on tray.
  • Sprinkle with sugar and caramelize with a kitchen torch or broiler until golden. Let cool before serving.

- Chill dough to prevent spreading.
- Use a torch for the best sugar caramelization.
