  • 1 cup vanilla protein powder
  • 1/2 cup creamy peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla bean paste
  • 1 cup unsweetened shredded coconut
  • Pinch of sea salt
  • Optional: 1–2 tbsp coconut flour
  • Optional: extra shredded coconut or white chocolate drizzle

Instructions
 

  • Line an 8x8-inch baking dish with parchment paper.
  • In a bowl, combine peanut butter, honey, coconut oil, and vanilla bean paste until smooth.
  • Stir in protein powder, shredded coconut, and sea salt. Add coconut flour if too soft.
  • Press mixture into the prepared pan and smooth the top.
  • Chill in the refrigerator for 1 to 2 hours or freeze for 30 minutes.
  • Lift out, slice into bars, and add optional toppings if desired.

Notes

- Use coconut flour for a firmer texture.
- Bars can be frozen for up to a month.
