Ingredients

Muffin Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Crumble Topping Ingredients

  • 1/4 cup brown sugar
  • 1/4 cup rolled oats

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • In a separate bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  • In a small bowl, mix together brown sugar, rolled oats, and cinnamon for the crumble topping.

Baking

  • Fill each muffin cup about two-thirds full with the batter, then generously sprinkle the crumble mixture on top.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and do not overmix the batter. You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor or add chocolate chips for a sweeter touch.
