  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla bean paste
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 tablespoons white sugar optional, for rolling

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Cream butter and sugars until fluffy, then mix in egg and vanilla.
  • Fold in flour, baking powder, baking soda, salt, and cinnamon until just combined.
  • Scoop dough into balls, roll in optional sugar, and place on baking sheet.
  • Bake for 10–12 minutes until edges are set but centers are soft. Cool on wire rack.

Notes

- For extra sparkle and sweetness, roll the dough balls in sugar before baking.
- Avoid over-mixing the dough to ensure soft, chewy cookies.
