  • 1/2 cup pumpkin puree Can substitute with sweet potato puree.
  • 1/4 cup cocoa powder For a richer chocolate flavor, add more.
  • 1/2 cup nuts (like walnuts or almonds), optional Adds crunch; can use nut butters as an alternative.
  • 1/4 cup shredded coconut, optional For rolling the balls to enhance flavor and appearance.
  • 1 teaspoon vanilla extract

Preparation

  • In a food processor, combine the Medjool dates, pumpkin puree, cocoa powder, and vanilla extract. Blend until smooth.
  • If using nuts, pulse the mixture a few times to break them into smaller pieces while retaining some texture.
  • Taste the mixture and sprinkle in a pinch of salt if desired.
  • With clean hands, scoot portions of the mixture and roll them into small balls, about 1 inch in diameter.
  • Optionally, roll some of the balls in shredded coconut until coated.
  • Arrange the chocolate date balls on a baking sheet or plate and refrigerate for at least 30 minutes.

Notes

For best results, ensure dates are soft. Soak dry dates in warm water for 10 minutes. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
