Ingredients
  

  • Cooking spray or butter
  • 2 cups cooked mashed potatoes
  • 3 large eggs beaten
  • 1 cup grated cheese such as Parmesan or Gruyère, divided
  • 1/4 cup minced fresh chives
  • 1/4 cup diced cooked turkey bacon or turkey bacon optional
  • Kosher salt
  • Freshly ground black pepper
  • Sour cream for serving (optional)

Instructions
 

  • 1. Preheat the oven to 400°F and lightly coat a mini-muffin tin with cooking spray or butter.
  • 2. In a bowl, combine mashed potatoes, eggs, 3/4 cup cheese, chives, and turkey bacon or turkey bacon (if using). Season with salt and pepper.
  • 3. Fill each muffin cup with the mixture and sprinkle with remaining cheese.
  • 4. Bake for 20 minutes until set and golden. Cool for 5 minutes, then release from the pan.
  • 5. Serve immediately with sour cream, if desired.

Notes

Adjust seasoning based on your mashed potatoes.
Use any cheese you prefer for different flavors.
