1. Preheat a barbeque chargrill plate on medium-high. Spray chicken with oil, season with salt and pepper. Grill 4 minutes each side. Set aside to cool.
2. Mash avocado and cream cheese in a bowl. Add shallots, tomatoes, lemon juice, salt, and pepper.
3. Preheat a grill to medium. Toast bread 2 minutes each side.
4. Spread avocado mixture on bread. Top with chicken and cheese. Grill until cheese melts. Add snow pea sprouts if desired.
Notes
Add lemon juice to prevent avocado browning.Store leftovers in foil and reheat in the oven to retain texture.
