Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup sugar
  • 16 oz cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla bean paste
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1 cup diced apples
  • 1 cup brown sugar
  • ½ cup unsalted butter
  • 1 cup heavy cream
  • 1 teaspoon vanilla bean paste
  • Pinch of salt

Instructions
 

  • 1. Preheat the oven to 350°F. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9x9 inch pan to form a crust.
  • 2. In a large bowl, beat cream cheese until smooth. Gradually add sugar, vanilla, and eggs, mixing well. Stir in cinnamon and apples. Pour over the crust.
  • 3. Bake for 45 minutes or until the filling is set. Cool completely.
  • 4. In a saucepan, combine brown sugar, butter, and cream. Boil, then simmer for 5 minutes. Stir in vanilla and salt.
  • 5. Drizzle caramel sauce over cooled bars. Cut into squares and serve.

Use tart apples like Granny Smith for a tangy contrast.
Ensure cream cheese is fully softened for a smoother filling.
