  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 2 tsp vanilla bean paste
  • 12 –16 Cadbury Mini Eggs chopped or whole
  • 1 cup semi-sweet chocolate chips optional
  • 1/2 cup chopped nuts optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk flour, baking soda, and salt.
  • In another bowl, beat butter with sugars until creamy, then add eggs and vanilla. Gradually mix in flour.
  • Fold in Cadbury Eggs and chocolate chips. Scoop dough into 2-tablespoon balls and place on the sheet, spacing 2 inches apart. Press a Cadbury Egg lightly on top of each cookie.
  • Bake 10–12 minutes until edges are golden and centers slightly undercooked. Cool 5 minutes on the sheet, then transfer to a wire rack.

Notes

- Use room temperature butter for best results.
- Pressing a Cadbury Egg on top adds extra chocolatey goodness.
