  • 1 box brownie mix for a 13x9-inch pan, plus eggs, oil, and water as listed on the package
  • Nonstick cooking spray
  • 24 Cadbury Creme Mini Eggs from 2 Cadbury Creme Mini Eggs 12-packs, unwrapped
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla bean paste
  • 2 tablespoons milk
  • 4 drops yellow food coloring
  • Sprinkles for decorating

Instructions
 

  • Preheat the oven to 350°F. Spray a 24-cup mini muffin tin generously with nonstick cooking spray.
  • Prepare the brownie batter in a medium bowl according to the directions on the brownie mix box, stirring just until smooth and no dry mix remains.
  • Spoon about 1 teaspoon of brownie batter into each well of the prepared mini muffin tin, filling each cup no more than halfway.
  • Place the pan in the preheated oven and bake for 11 minutes, until the tops are set but still soft.
  • Remove the pan from the oven and let the brownie bites cool in the pan for 2 minutes.
  • Gently press 1 unwrapped Cadbury Creme Mini Egg into the center of each warm brownie bite, allowing it to sink slightly into the brownie. Let cool in the pan for another 2 minutes.
  • Carefully transfer the brownie bites to a wire rack and let them cool completely to room temperature before frosting.
  • While the brownie bites cool, place the softened butter in a large mixing bowl. Beat with an electric hand mixer or stand mixer on medium speed for about 3 minutes until smooth and creamy.
  • Add the sifted powdered sugar, salt, vanilla, and milk to the bowl. Start mixing on low speed until the sugar is incorporated, then increase to high speed and beat for 3 minutes until light and fluffy.
  • Add the yellow food coloring to the frosting and mix on low speed or stir by hand until the color is evenly distributed.
  • Transfer the frosting to a piping bag fitted with a star or round tip, or use a small spatula or knife. Pipe or spread the yellow frosting onto the cooled brownie bites, covering the Cadbury Creme Eggs.
  • Immediately top each frosted brownie bite with sprinkles. Serve right away or store in an airtight container until ready to serve.

Notes

- For easiest removal, let the brownie bites cool completely in the pan before gently twisting them out with your fingers or a small offset spatula.
- If the brownie tops crack when you press in the Cadbury Creme Eggs, do not worry; the frosting will cover any imperfections.
- For a neater look, chill the brownie bites briefly before frosting so the centers are completely set.
- You can make the brownie bases up to 2 days ahead and frost them on the day you plan to serve.
