- 500 ml 2 cups water
- 2 tablespoons dried butterfly pea flowers
- 1 teaspoon fresh ginger sliced (optional)
- Juice of 1 lemon
- 1 tablespoon apple cider vinegar with the mother
- 1 teaspoon honey or to taste
1. Boil 500 ml of water in a saucepan. Add fresh ginger now if using.
2. Remove from heat and stir in the butterfly pea flowers.
3. Let steep for 10 minutes until water turns deep blue.
4. Strain the flowers (optional).
5. Stir in lemon juice, apple cider vinegar, and honey. Watch the drink change color.
6. Serve hot or chilled over ice.
Adjust honey to taste.
For a deeper color, steep longer.
Best served fresh, but can be refrigerated for 24 hours.
