- 1 cup butter
- 2 cups brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1 cup Biscoff cookie chunks
- 1 cup white chocolate chunks or chips
- Cookie Butter Frosting
- 1/2 cup butter softened
- 1/2 cup cookie butter or Biscoff spread
- 1 cup powdered sugar
- 1-2 tbsp milk
1. Preheat oven to 350°F. Line an 8x8 inch pan with parchment paper.
2. Brown butter in a large pan over medium heat, stirring until nutty and brown. Let cool for 10 minutes.
3. Stir brown sugar into cooled butter until combined.
4. Add eggs one at a time, mixing well. Stir in vanilla.
5. Mix in flour and salt until just combined. Add Biscoff cookie chunks and white chocolate chunks.
6. Spread mixture in prepared pan. Bake for 25-30 minutes until slightly wobbly in the center.
7. Cool for 15 minutes, then refrigerate for 1 hour.
8. For frosting, mix butter and cookie butter until smooth. Add powdered sugar, and milk to desired consistency.
9. Once bars are cool, frost and cut into squares.
Use salted butter for extra flavor.
Ensure the butter mixture is cool before adding eggs to prevent cooking them.
