  • 1 ripe avocado
  • 1/4 cup unsweetened cacao powder
  • 1/4 cup melted dark chocolate 70% or higher
  • 3 tablespoons maple syrup
  • 1/2 teaspoon pure vanilla bean paste
  • Pinch of sea salt
  • Optional: 1 tablespoon coconut oil

Instructions
 

  • Cut the avocado in half, remove the pit, and scoop the flesh into a blender. Blend until smooth.
  • Add melted dark chocolate, cacao powder, maple syrup, vanilla bean paste, and sea salt. Blend until silky and uniform.
  • Transfer mixture to a bowl, cover, and refrigerate for 30 to 60 minutes until firm.
  • Use a tablespoon to portion out each truffle, rolling into smooth balls.
  • Dust with cacao powder or drizzle with additional melted dark chocolate. Chill for 10 to 15 minutes before serving.

Notes

- Use ripe avocados for the best texture.
- Adjust maple syrup to taste for sweetness.
