  • 1 ripe avocado
  • 1/4 cup unsweetened cacao powder
  • 1/4 cup melted dark chocolate 70% or higher
  • 3 tablespoons maple syrup
  • 1/2 teaspoon pure vanilla bean paste
  • Pinch of sea salt
  • Optional: 1 tablespoon coconut oil
  • Optional: Melted dark chocolate for coating

Instructions
 

  • Cut the avocado in half, remove the pit, and scoop the flesh into a food processor. Blend until smooth.
  • Add melted dark chocolate, cacao powder, maple syrup, vanilla bean paste, and sea salt. Blend until uniform. Adjust sweetness as needed.
  • Transfer mixture to a bowl, cover, and refrigerate for 30 to 60 minutes until firm.
  • Use a tablespoon to scoop and roll the mixture into balls.
  • Dust truffles with cacao powder or coat with melted chocolate. Chill for 10 to 15 minutes to set.

Notes

- Use ripe but not brown avocados for the best texture.
- Add coconut oil for a smoother texture if desired.
