Ingredients
  

  • 1 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsalted butter melted
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup unsalted butter softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 cup full-fat sour cream
  • 2 teaspoons pure vanilla bean paste
  • 3 cups peeled chopped apples
  • 1/4 teaspoon ground cinnamon

Instructions
 

  • 1. Preheat oven to 350°F and grease or line a 9x13-inch baking pan.
  • 2. Mix brown sugar, granulated sugar, cinnamon, and salt in a bowl. Stir in melted butter. Mix in flour until crumbles form. Chill.
  • 3. Whisk flour, baking soda, baking powder, and salt. Set aside.
  • 4. Beat softened butter and sugar on high speed until creamy. Add eggs, sour cream, and vanilla. Mix until combined.
  • 5. Toss apples with cinnamon.
  • 6. Spread batter in pan. Top with apples and crumb topping. Press down.
  • 7. Bake 45-55 minutes until a toothpick comes out clean. Cover with foil if browning too fast.
  • 8. Cool for at least 30 minutes before serving. Optional: drizzle with icing.

Notes

For depth of flavor, use a mix of sweet and tart apples like Honeycrisp and Granny Smith.
Sour cream is vital for moisture; full-fat yogurt is a suitable substitute.
Crumb topping can be made in advance and kept chilled.
