Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 3 tbsp brown sugar
  • 2 cups apple cider reduced to 1/2 cup
  • 3 8 oz packages cream cheese
  • 1 cup sour cream
  • 1 cup brown sugar
  • 3 large eggs
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp vanilla extract

Instructions
 

  • 1. Preheat oven to 325°F. Prepare water bath.
  • 2. Mix graham crumbs, melted butter, and sugar. Press into springform pan, bake 10 minutes.
  • 3. Simmer apple cider until reduced to 1/2 cup. Cool slightly.
  • 4. Beat cream cheese until smooth. Add brown sugar, sour cream, vanilla.
  • 5. Mix in eggs one at a time, then spices and cider reduction.
  • 6. Pour filling over crust. Bake in water bath 55–65 minutes until center jiggles slightly.
  • 7. Turn off oven, crack door, and let cool 1 hour.
  • 8. Chill cheesecake overnight before slicing. Serve with extra cider drizzle.

Notes

Cheesecake can be made 1–2 days in advance.
Store refrigerated up to 5 days or freeze up to 2 months.
Try topping with caramel sauce or sautéed apples.
