- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 3 tbsp brown sugar
- 2 cups apple cider reduced to 1/2 cup
- 3 8 oz packages cream cheese
- 1 cup sour cream
- 1 cup brown sugar
- 3 large eggs
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp vanilla extract
1. Preheat oven to 325°F. Prepare water bath.
2. Mix graham crumbs, melted butter, and sugar. Press into springform pan, bake 10 minutes.
3. Simmer apple cider until reduced to 1/2 cup. Cool slightly.
4. Beat cream cheese until smooth. Add brown sugar, sour cream, vanilla.
5. Mix in eggs one at a time, then spices and cider reduction.
6. Pour filling over crust. Bake in water bath 55–65 minutes until center jiggles slightly.
7. Turn off oven, crack door, and let cool 1 hour.
8. Chill cheesecake overnight before slicing. Serve with extra cider drizzle.
Cheesecake can be made 1–2 days in advance.
Store refrigerated up to 5 days or freeze up to 2 months.
