Deliciously soft and warm churro bites made easily in an air fryer, coated with a cinnamon-sugar blend for that perfect sweet treat.

Ingredients
  

For the dough

  • 1 cup almond flour Brings tenderness and flavor.
  • 1/2 cup coconut flour Absorbs moisture and helps the bites hold their shape.
  • 1/4 cup sugar substitute (like erythritol) Sweetens the dough.
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon For flavor in the dough.
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened applesauce Keeps the interior moist.
  • 1 teaspoon vanilla extract

For the coating

  • to taste cinnamon sugar (mixed sugar substitute and cinnamon) Toss the hot churro bites in this to coat.

Instructions
 

Preparation

  • In a medium bowl, stir together the almond flour, coconut flour, sugar substitute, baking powder, cinnamon, and salt until the cinnamon looks evenly distributed.
  • In a separate bowl, whisk the eggs, applesauce, and vanilla until glossy and fully combined.
  • Pour the wet mixture into the dry ingredients and stir until a cohesive dough forms.
  • Preheat the air fryer to 350°F (175°C).

Cooking

  • Pinch off small pieces of dough and roll them into bite-sized balls or short logs.
  • Place the pieces in the air fryer basket and cook for 8–10 minutes, until golden brown on the outside.
  • Immediately toss the hot churro bites in the cinnamon sugar coating.

Serving

  • Serve warm, ideally when the edges are crisp and the centers are soft.

Notes

For best results, reshape the dough if it appears crumbly, and make sure to coat the bites in cinnamon sugar straight out of the air fryer. They are best enjoyed fresh but can be stored in an airtight container in the fridge for later.
