Ingredients
  

For the Caramels

  • 1 cup Medjool Dates (pitted) Use fresh dates for the best texture and natural sweetness.
  • 2 tablespoons Almond Butter (or sunflower seed butter for nut-free) Sunflower seed butter can be used as a nut-free alternative.
  • 1 tablespoon Coconut Oil (melted) Melt the coconut oil before adding.
  • 1 cup Chocolate Chips (or chocolate bar; use dark chocolate for richer flavor) Ensure chocolate is fully melted for smooth coating.

Preparation

  • Place the pitted Medjool dates into a food processor and pulse until finely chopped and resembling a sticky paste (about 30 seconds).
  • Add the almond butter and melted coconut oil to the date paste, blending until smooth and evenly combined (about 1 minute).
  • Line an 8x8-inch baking dish with parchment paper and transfer the date mixture into the dish. Spread evenly and smooth the top.
  • Refrigerate for about 15-20 minutes to firm up slightly.

Chocolate Coating

  • Melt chocolate chips in a heat-proof bowl over simmering water or in the microwave, stirring until smooth.
  • Once the date mixture is set, remove it from the fridge and cut into small squares or rectangles.
  • Dip each piece into the melted chocolate, allowing excess to drip off, and place them on a parchment-lined baking sheet.
  • Refrigerate again for about 15 minutes until the chocolate is set.

Notes

Store leftovers in an airtight container in the fridge for up to a week, or freeze in a safe container for up to three months.
