Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 ripe bananas mashed
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/3 cup melted unsalted butter
  • 1/2 cup chopped walnuts optional
  • 1/4 cup all-purpose flour streusel
  • 2 tablespoons brown sugar streusel
  • 1 tablespoon cold butter streusel

Instructions
 

  • 1. Preheat oven to 375°F. Line a muffin tin with paper liners.
  • 2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • 3. In another bowl, mash bananas and mix in sugar, egg, and melted butter.
  • 4. Combine wet and dry ingredients until just mixed. Fold in walnuts if using.
  • 5. For streusel, mix flour and brown sugar. Add cold butter, rubbing until crumbly.
  • 6. Fill muffin cups 2/3 full with batter. Top with streusel.
  • 7. Bake 18-20 minutes until golden. Cool in pan for 5 minutes before transferring to a rack.

Notes

Use overripe bananas for best flavor.
Avoid overmixing to keep muffins tender.
