3-Ingredient Sweet Potato Dog Cookies

- 1 cup mashed cooked sweet potato plain, no seasoning
- 1 3/4 cups oat flour plus extra for dusting
- 2 tablespoons plain Greek yogurt
- 1/8 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Add the mashed cooked sweet potato to a mixing bowl and mash again until very smooth.
- Stir in the plain Greek yogurt until fully combined with the sweet potato.
- Add the ground cinnamon and mix until evenly distributed.
- Add the oat flour gradually, stirring until a soft dough forms that is smooth and not sticky.
- Lightly dust a work surface with oat flour and place the dough on the surface.
- Roll the dough out with a rolling pin to about 1/4 inch thickness.
- Use small cookie cutters or a knife to cut shapes from the dough, gathering and rerolling scraps as needed.
- Arrange the cut cookies on the prepared baking sheet, leaving a little space between each one.
- Bake for 25 to 30 minutes, or until the cookies feel firm at the edges and look dry on top.
- Turn off the oven and let the cookies sit inside for an additional 10 to 15 minutes for extra crunch, if desired.
- Remove the baking sheet from the oven and let the cookies cool completely on the pan before serving or storing.

- Make your own oat flour by grinding old-fashioned oats in a food processor until very fine.
- If the dough feels too sticky, sprinkle in an extra tablespoon of oat flour at a time until it rolls smoothly.
