Description

A sweet, nourishing treat inspired by nostalgic summer flavors.


Ingredients

Scale

1 1/2 cups rolled oats

1 cup raw cashews

1/2 cup creamy cashew butter

1/4 cup pure maple syrup

1/4 cup Medjool dates, pitted

1 tsp vanilla bean paste

1/4 tsp salt

1 cup freeze-dried strawberries, crushed

1/4 cup white chocolate chips

1 tsp coconut oil

Freeze-dried strawberries for topping


Instructions

1. Pulse oats and cashews in a food processor until fine.

2. Add dates and pulse until chopped.

3. Add cashew butter, maple syrup, vanilla, and salt. Blend until dough forms.

4. Transfer to a bowl and mix in crushed strawberries.

5. Roll 2 tablespoons of dough into balls. Place on parchment-lined tray.

6. Freeze bites for 20-30 minutes.

7. Melt white chocolate chips with coconut oil, then drizzle over bites.

8. Top with additional crushed strawberries.

9. Chill in the fridge to set before serving.

Notes

Store in fridge for up to 1 week or freeze for up to 3 months.

If dates are dry, soak in warm water before using.
