Strawberry Crêpe Recipe – Elegant, Sweet, and Easy to Make

Description

There’s no better way to take a regular crepe over the top than this amazing Strawberry Crepes recipe with a creamy whipped filling and fresh strawberries. They’re easy to make and perfect for a fancy breakfast or dessert!


Ingredients

For the Crepes:

4 large eggs

1/3 cup butter, softened

1/2 cup granulated sugar

1 cup all-purpose flour

1 1/4 cups milk

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Filling:

2 cups fresh strawberries, sliced

4 ounces cream cheese, room temperature

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1 pint heavy whipping cream

3 Tablespoons powdered sugar


Instructions

1. Add all ingredients to a blender and blend until smooth. Scrape down the sides if needed. Refrigerate for 30 minutes (optional).

2. Heat a non-stick skillet to medium heat. Lightly grease with butter or cooking spray.

3. Pour a few tablespoons of batter and tilt skillet to coat bottom thinly. Cook 30–60 seconds until edges curl and bottom is golden. Flip and cook 30 seconds.

4. Remove to a plate, covering to keep warm.

5. In a bowl, beat cream cheese, powdered sugar, and vanilla for 2 minutes.

6. In another bowl, beat heavy cream with powdered sugar until stiff peaks. Fold into cream cheese mixture.

7. Spread filling on each crepe, add sliced strawberries, roll or fold, and serve with extra berries, powdered sugar, and whipped cream.

Notes

Make Ahead: Batter can be made 1 day ahead and kept in the fridge. Filling and strawberries can also be prepped in advance.

Variations: Try with raspberries, blackberries, or bananas. Add Nutella for a richer twist. For savory crepes, omit vanilla and sugar and add savory fillings.
