Description

A delightful twist on classic quesadillas with a sweet cheesecake filling.


Ingredients

Scale

1/2 cup cream cheese, softened

2 tbsp sugar

1/2 tsp vanilla bean paste

1/2 cup strawberries, diced

4 tortillas, 6 inch

2 tbsp butter, softened

1 tsp sugar

1/2 tsp cinnamon


Instructions

1. Add the softened cream cheese, sugar, and vanilla to a mixing bowl and beat until smooth.

2. Dice strawberries and fold them into the cream cheese mixture.

3. Spread half of the mixture onto a tortilla.

4. Heat 1 tsp of butter in a pan over medium-high heat. Lay the tortilla in the pan, cream cheese side up.

5. Spread 1 tsp of butter on a second tortilla and place it butter side up on top of the first tortilla.

6. Cook each side for 2-3 minutes or until crispy.

7. Mix cinnamon and sugar, then sprinkle on top of the cooked quesadilla.

8. Repeat steps for the second quesadilla.

9. Let sit for 2 minutes, slice, and serve with strawberry sauce if desired.

Notes

Great on their own or dipped in homemade strawberry sauce.

Store in the fridge for up to 3-4 days or freeze for up to 2-3 months.
