Creamy overnight oats with fresh strawberries and a silky white chocolate yogurt topping for a protein-packed breakfast treat.
Ingredients
1 cup rolled oats
1 tablespoon chia seeds
2 tablespoons almond butter
1 cup milk or almond milk
2 tablespoons maple syrup
1/2 cup vanilla Greek yogurt, divided
6 medium strawberries, fresh or thawed and sliced
1 tablespoon white chocolate chips
1/2 teaspoon coconut oil
1/4 cup vanilla Greek yogurt (for cream topping)
Instructions
1. In two jars, mix rolled oats, chia seeds, almond butter, milk, maple syrup, and 1/4 cup vanilla Greek yogurt.
2. Add sliced strawberries to the jars and stir to combine.
3. In a microwave-safe bowl, melt white chocolate chips and coconut oil together for 30-45 seconds, stirring every 15 seconds until smooth.
4. Whisk 1/4 cup vanilla Greek yogurt into the melted white chocolate mixture until creamy.
5. Spoon and smooth the cream topping over each jar of oats.
6. Cover jars with lids and refrigerate overnight or at least 4 hours.
7. Enjoy chilled in the morning.
Notes
For a jammy swirl, mash thawed frozen strawberries and layer into the oats or topping.
Prepare a large batch by mixing the base in a bowl and dividing among jars for up to 4 days of breakfasts.
