Description

A soft cookie with the flavors of pumpkin, cinnamon, and pecans. The tastes of autumn in a cookie!


Ingredients

1 cup butter, softened

3/4 cup sugar

1/4 cup brown sugar, packed

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon allspice

1 egg

1 teaspoon vanilla

1 cup canned pumpkin

2 cups flour

3/4 cup chopped pecans


Instructions

1. Preheat oven to 350 degrees.

2. Line baking sheet with parchment paper.

3. In a bowl, mix butter, sugars, and egg with a mixer on medium speed until light and fluffy.

4. Add baking powder, baking soda, salt, cinnamon, nutmeg, and allspice to the butter mixture and blend.

5. Add pumpkin and pecans; blend until combined.

6. Drop heaping teaspoons of dough onto the lined baking sheet.

7. Bake for 12-14 minutes until lightly browned.

8. Transfer cookies to a wire rack and let cool.

Notes

Ensure butter is softened for easier mixing.

Use canned pumpkin puree, not pie filling, for best results.
