Ingredients
2 tbsp olive oil
1 medium sweet onion, chopped
4 cloves garlic, minced
2 medium carrots, sliced thin
2 stalks celery, chopped
4 cups low-sodium vegetable broth
1 tsp dried thyme
1 tsp dried oregano
2 cups leafy greens (spinach or kale)
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic; sauté until translucent, about 5 minutes.
3. Add sliced carrots and chopped celery; cook until softened, about 5 minutes.
4. Pour in vegetable broth, add dried thyme and oregano; bring to a gentle boil.
5. Reduce heat and simmer for 20 minutes.
6. Stir in leafy greens and cook until wilted, about 5 minutes.
7. Season with salt and pepper to taste; serve warm.
Notes
Use baby spinach for a milder flavor or kale for a heartier texture.
Add a squeeze of lemon or a pinch of red pepper flakes for extra brightness.
