Description

Melt-in-your-mouth cookies with a refreshing mint and chocolate flavor.


Ingredients

Scale

1 cup unsalted butter, softened

⅔ cup powdered sugar, sifted

2 ¼ cups all-purpose flour, spooned and leveled

½ teaspoon salt

1 teaspoon mint extract or peppermint extract

Green food coloring gel

¾ cup mini chocolate chips

Additional powdered sugar for coating


Instructions

1. Line a large cookie sheet with parchment paper.

2. Beat the butter and powdered sugar until light and fluffy.

3. Mix in flour, salt, and mint extract.

4. Add green food coloring and chocolate chips.

5. Form dough into balls and refrigerate.

6. Preheat oven to 375°F.

7. Bake cookies for 7-8 minutes until lightly browned.

8. Cool on sheet, then dust with powdered sugar.

9. Dust a baking sheet with powdered sugar. Place cookies on it and dust with more powdered sugar until coated. Let cool completely.

Notes

Store leftovers in an airtight container for up to four days.

To freeze: Let cookies cool completely, place on a baking sheet and flash freeze for 30 minutes. Transfer cookies to a freezer-safe ziplock bag and freeze for up to 3 months.
