Description

Mini pies with a flaky, buttery crust, spiced apple filling, and brown sugar oat topping.


Ingredients

1 1/4 cups flour

1/4 teaspoon salt

1/2 cup cold butter, cut into 1/4-inch pieces

56 tablespoons ice water

2 1/4 pounds tart apples, peeled and diced

1 1/2 tablespoons lemon juice

3/4 cup brown sugar, packed

1/4 cup flour

1 1/2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

1 pinch cardamom

1 pinch salt

3/4 cup brown sugar, packed

3/4 cup old-fashioned oats

1/2 cup flour

1 pinch salt

6 tablespoons cold butter, cut into 1/4-inch pieces


Instructions

1. In a medium mixing bowl, combine 1 1/4 cups flour and 1/4 teaspoon salt. Cut in 1/2 cup cold butter until pea-sized pieces form.

2. Add 5-6 tablespoons ice water, one tablespoon at a time, until dough forms. Wrap in plastic and chill for 30 minutes.

3. Preheat oven to 375°F. Roll dough to 1/4-inch thickness and cut with a 3 1/2-inch round cutter. Place in muffin tins and chill.

4. Par-bake crusts for 10 minutes. Set aside.

5. For filling, combine apples, lemon juice, and sugar. Let sit for 30 minutes.

6. Mix flour, spices, and salt. Add to apples and heat for 5-10 minutes until thickened.

7. For topping, combine brown sugar, oats, flour, and salt. Rub in butter until crumbly.

8. Assemble pies by adding 1 tablespoon filling to each crust, then topping with crumble.

9. Bake for 20-25 minutes until golden and bubbling. Cool before serving.

Notes

Use Granny Smith apples for best results.

Ensure butter is cold for a flaky crust.
