Description

This loaded potato salad is a creamy, savory twist on a classic. Made with red potatoes, bacon, cheddar, and green onions, it’s perfect for any gathering.


Ingredients

2 lbs red potatoes, unpeeled and chopped

1 cup sour cream

1 cup mayonnaise

1 tbsp Dijon mustard (or yellow)

1 tsp garlic powder

Salt and black pepper to taste

6 slices cooked bacon, crumbled

1 ½ cups shredded sharp cheddar cheese

4 green onions, sliced

2 hard-boiled eggs, chopped (optional)

1 tbsp chopped parsley (optional)


Instructions

1. Boil potatoes until fork-tender, about 10–12 minutes. Drain and cool.

2. In a large bowl, whisk together sour cream, mayo, mustard, garlic powder, salt, and pepper.

3. Fold in cooled potatoes, bacon, cheddar, and green onions.

4. Add chopped eggs if using. Mix gently.

5. Chill for at least 1 hour before serving.

6. Top with extra bacon, cheese, and parsley before serving.
