Herb Lemon Skewers: Zesty Grilling in 30 Minutes

Description

Easy lemon chicken skewers with garlic and herbs, perfect for summer dinners.


Ingredients

Scale

1/4 cup olive oil

1/4 cup lemon juice

Zest of 1 lemon

23 garlic cloves, crushed

2 tsp fresh thyme

2 tsp rosemary

1 tsp dried oregano

1 tsp salt

1 tsp pepper

4 large chicken breasts, skinless, boneless

Wooden skewers, soaked in boiling water for 30 minutes


Instructions

1. Combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper in a bowl.

2. Slice chicken into bite-sized chunks and place in a bowl. Pour marinade over chicken, cover, and refrigerate for at least 30 minutes or up to 24 hours.

3. Thread marinated chicken onto soaked wooden skewers.

4. Heat an outdoor grill or stovetop grill pan. Cook skewers, turning every 3-5 minutes, until chicken is cooked through and golden brown on all sides.

5. Remove from heat and let rest for 5 minutes before serving.

Notes

Ensure skewers are soaked to prevent burning.
