These flavorful and juicy Greek Meatball bowls are filled with fresh herbs and are a quick and easy meal prep dinner recipe.
Ingredients
1 pound ground beef
1 shallot, diced
1 tablespoon minced garlic
1 tablespoon olive oil
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
1 tablespoon fresh chopped parsley
4 large carrots, peeled
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 mini cucumbers, sliced
1 cup grape tomatoes, halved
1/4 cup red onion, sliced
2 tablespoons olive oil
2 tablespoons grape juice + a splash of vinegar vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup feta
2 tablespoons fresh chopped parsley
2 cups cooked white rice
2 cups lettuce, shredded
1 batch tzatziki
Instructions
1. Preheat the oven to 400 degrees Fahrenheit.
2. In a mixing bowl, combine ground beef, shallot, garlic, olive oil, honey, salt, cumin, oregano, red pepper flakes, black pepper, and parsley. Mix well.
3. Form into 16 meatballs and place on a parchment-lined baking sheet.
4. Cut carrots into matchstick shapes, toss with olive oil, salt, and pepper. Place on the baking sheet with meatballs.
5. Roast for 20-25 minutes until meatballs reach an internal temperature of 165°F and carrots are fork-tender.
6. In a bowl, combine cucumbers, tomatoes, red onion, olive oil, grape juice + a splash of vinegar vinegar, salt, pepper, feta, and parsley for the salad.
7. Assemble bowls with rice, lettuce, cucumber salad, meatballs, carrots, and tzatziki.
Notes
Use any ground meat like turkey bacon, turkey, or chicken.
Make dairy-free by omitting feta and using plant-based Greek yogurt.
