Description
Inspired by Gilmore Girls, these cinnamon-sugar coffee cake cookies have a tender crumb and buttery streusel topping — perfect with a hot cup of coffee.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla extract
1/4 cup sour cream
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon

Streusel Topping:
2 tbsp melted butter
1/4 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
Instructions
Cream butter and sugars until fluffy.
Mix in egg, vanilla, and sour cream.
Add dry ingredients and mix until just combined.
Chill dough for 30 minutes.
Scoop onto baking sheet and press slightly.
Mix streusel ingredients and sprinkle on top.
Bake at 350°F (175°C) for 10–12 minutes.
Cool on wire rack and serve with coffee.
Notes
Chill dough for better shape and texture.
Substitute sour cream with Greek yogurt if needed.
Store in airtight container for up to 4 days.
