Description

Ingredients

4 cups potatoes, diced

2 cups carrots, sliced

2 cups zucchini, sliced

3 tbsp olive oil

3 cloves garlic, minced

1 tbsp dried rosemary

1 tbsp dried thyme

Salt and pepper to taste


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a large bowl, combine potatoes, carrots, zucchini, olive oil, garlic, rosemary, thyme, salt, and pepper.

3. Spread vegetables in a single layer on the prepared baking sheet.
