Description

These Double-Decker Ice Cream Sandwiches combine two layers of homemade cookies with rich, real ice cream for the ultimate frozen dessert.


Ingredients

Scale

`12 cookies (mix & match: chocolate chip, brownie, oatmeal)

2 cups ice cream (vanilla, raspberry swirl, etc.)

Optional toppings: mini chips, sprinkles, crushed nuts, melted chocolate


Instructions

Lay cookies on parchment-lined tray.

Scoop 1/4 cup ice cream onto 6 cookies.

Top with second cookie; freeze 10 min.

Add another ice cream layer on top.

Finish with final cookie; press gently.

Roll sides in toppings if desired.

Freeze at least 2–4 hours.

Wrap individually for storage.

Notes

Let sit at room temp 2–3 mins before serving for best texture. Use real ice cream for creaminess. Kids love making their own combos!
