Description

A cozy, make-ahead breakfast that captures the warmth of autumn flavors.


Ingredients

Scale

1 cup pure pumpkin puree

2 Tbsps pure maple syrup or raw honey

1/2 cup plain Greek yogurt or coconut yogurt

1/2 cup unsweetened milk of choice

1 teaspoon vanilla bean paste

1 cup old-fashioned rolled oats

2 tsps chia seeds

1 tsp pumpkin pie spice


Instructions

1. In a large bowl, mix Greek yogurt, milk, pumpkin puree, vanilla, and maple syrup until well combined.

2. Stir in oats, chia seeds, and pumpkin pie spice.

3. Pour mixture into a large container or 4 smaller containers with lids.

4. Refrigerate for at least 6 hours or overnight.

5. Stir before serving and garnish with toppings of choice.

Notes

Use glass canning jars for easy storage.

Oats stay fresh for 3-4 days in the refrigerator.
