Description

This easy Cranberry Pecan Chicken Salad features tender chicken, tart cranberries, crisp apples, and toasted pecans, all tossed in a creamy, seasoned dressing. Perfect for meal prep, sandwiches, or light lunches.


Ingredients

33 ½ cups cooked chicken

¾ cup dried cranberries

1 apple – chopped

½ cup pecans – chopped

¼ cup green onions – chopped

¾ cup mayonnaise

1 teaspoon salt

¼ teaspoon garlic powder

½ teaspoon pepper


Instructions

1. Add chicken, cranberries, pecans, apple and green onion to a medium-size bowl.

2. In a small bowl or measuring cup, whisk together mayonnaise, salt, garlic powder, and pepper. Pour over chicken and other ingredients.

3. Using a large spoon or spatula, toss all ingredients together until well mixed.

4. Serve immediately or chill before serving. Store in the fridge for up to 5 days.

Notes

Store leftovers in an airtight container in the refrigerator for 3–5 days.

Best when served chilled or at room temperature.

You can swap mayo for half Greek yogurt for a lighter version.
