Description

Fresh corn salsa made with sweet corn, lime, cilantro, and jalapeño. Easy, healthy, and ready in 10 minutes.


Ingredients

Scale

2 cups fresh or thawed sweet corn

1/2 cup diced red onion

1 jalapeño, minced

1/4 cup chopped fresh cilantro

Juice of 1 lime

1/2 tsp sea salt

Optional: 1/4 cup diced red bell pepper or mango


Instructions

1. Combine corn, onion, jalapeño, and bell pepper (if using) in a mixing bowl.

2. Add chopped cilantro and lime juice.

3. Sprinkle with sea salt.

4. Toss everything together until evenly mixed.

5. Chill for 30 minutes before serving to allow flavors to meld.

6. Serve with chips or over tacos.

Notes

To char the corn, cook in a dry skillet for 2–3 minutes before mixing.

Make it ahead: Corn salsa stores well in the fridge for 3–4 days.
