Description

A delightful way to transform leftover mashed potatoes into cheesy bites.


Ingredients

Scale

Cooking spray or butter

2 cups cooked mashed potatoes

3 large eggs, beaten

1 cup grated cheese, such as Parmesan or Gruyère, divided

1/4 cup minced fresh chives

1/4 cup diced cooked turkey bacon or turkey bacon (optional)

Kosher salt

Freshly ground black pepper

Sour cream, for serving (optional)


Instructions

1. Preheat the oven to 400°F and lightly coat a mini-muffin tin with cooking spray or butter.

2. In a bowl, combine mashed potatoes, eggs, 3/4 cup cheese, chives, and turkey bacon or turkey bacon (if using). Season with salt and pepper.

3. Fill each muffin cup with the mixture and sprinkle with remaining cheese.

4. Bake for 20 minutes until set and golden. Cool for 5 minutes, then release from the pan.

5. Serve immediately with sour cream, if desired.

Notes

Adjust seasoning based on your mashed potatoes.
