Description
A delightful fall treat reminiscent of caramel apple suckers, made with marshmallows and white chocolate chips.
Ingredients
1/4 cup unsalted butter
3 cups mini marshmallows
1/2 cup granulated sugar
1/2 cup heavy cream
3 packets apple cider drink mix
3 cups white chocolate chips
1/2 cup caramel bits or caramel squares
1 1/2 Tbsp heavy cream
Instructions
1. Line an 8×8 inch baking pan with 2 layers of tin foil, leaving an overhang.
2. In a large pot, combine butter, marshmallows, sugar, heavy cream, and apple cider packets. Cook over medium heat, stirring occasionally, until marshmallows are melted, about 8-10 minutes.
3. Meanwhile, place caramel bits and heavy cream in a microwave-safe bowl. Microwave at 45-second intervals at 50% power until melted and smooth. Set aside.
4. Remove pot from heat and stir in white chocolate chips until melted.
5. Pour fudge into the prepared pan. Drizzle melted caramel on top and use a small metal spatula to create swirls.
6. Refrigerate for 3 hours. Cut into squares.
Notes
Use an overhang of foil to lift fudge easily from the pan.
Store in the fridge for best texture.
