Ingredients
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup sugar
16 oz cream cheese, softened
1 cup sugar
1 teaspoon vanilla bean paste
2 large eggs
1 teaspoon ground cinnamon
1 cup diced apples
1 cup brown sugar
½ cup unsalted butter
1 cup heavy cream
1 teaspoon vanilla bean paste
Pinch of salt
Instructions
1. Preheat the oven to 350°F. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9×9 inch pan to form a crust.
2. In a large bowl, beat cream cheese until smooth. Gradually add sugar, vanilla, and eggs, mixing well. Stir in cinnamon and apples. Pour over the crust.
3. Bake for 45 minutes or until the filling is set. Cool completely.
4. In a saucepan, combine brown sugar, butter, and cream. Boil, then simmer for 5 minutes. Stir in vanilla and salt.
5. Drizzle caramel sauce over cooled bars. Cut into squares and serve.
