Burger Bowls: Deconstruct Your Burger for a Fresh Twist

Description

These Loaded Burger Bowls are perfect for nights when energy levels are low and you need dinner on the table fast!


Ingredients

Scale

2 lb 10 oz potatoes, cubed

2 tsp sea salt flakes

1/4 tsp freshly cracked black pepper

5 tbsp olive oil (divided)

1 onion, finely diced

1 lb 2 oz lean ground beef

1 tsp sweet paprika

1/2 tsp onion powder

1/2 tsp garlic powder

1 cup whole-egg mayonnaise

2 tbsp finely chopped gherkins

1 tsp dijon mustard

1 tbsp ketchup

1 large romaine lettuce, cut into strips

1/2 cup shredded cheddar cheese

7 oz cherry tomatoes, halved

1/2 red onion, finely sliced

1/4 cup sliced gherkins


Instructions

1. Preheat oven to 425°F.

2. Toss potatoes with 4 tbsp olive oil, salt, and pepper. Spread on baking dish.

3. Bake potatoes for 40 minutes, turning halfway, until golden.

4. Heat remaining olive oil in a pan over medium-high heat. Add onion, cook until softened.

5. Add beef, cook until browned. Stir in paprika, onion powder, garlic powder. Set aside.

6. Combine mayonnaise, chopped gherkins, mustard, ketchup, paprika, onion powder, and garlic powder. Add water to desired consistency.

7. Divide lettuce among bowls. Top with potatoes, beef, cheese, tomatoes, red onion, and sliced gherkins.

8. Drizzle with sauce and serve.

Notes

You can substitute ground turkey or chicken for beef.

Potatoes can be made ahead and reheated in an oven.

Store beef and sauce in the fridge for up to 3 days.
