Description
These brownie cookie dough sandwich cookies are chewy, rich, and filled with edible cookie dough for the ultimate dessert experience.
Ingredients
1 box brownie mix (or homemade recipe)
3 sticks unsalted butter, softened
¾ cup packed light brown sugar
3½ cups powdered sugar
1 cup heat-treated flour
¾ tsp salt
3 tbsp milk
2½ tsp vanilla extract
¾ cup mini chocolate chips
Instructions
1. Prepare brownie batter and bake cookies by scooping 1½ tbsp portions onto parchment-lined tray.
2. Bake at 325°F for 10–12 minutes or until cracked and puffed. Cool completely.
3. For filling, beat butter and brown sugar until fluffy.
4. Add powdered sugar and beat until smooth.
5. Mix in flour, salt, milk, and vanilla until combined.
6. Fold in mini chocolate chips.
7. Spread cookie dough filling on one brownie cookie and top with another to make a sandwich.
Notes
To heat-treat flour, bake at 350°F for 5–7 minutes.
Chill cookies before assembly for easier handling.
Store in fridge up to 5 days or freeze up to 2 months.
